Roasted Chicken

Ingredients

Chicken

  • 1 Whole Chicken
  • 2 tbs Olive Oil

Herb mixture

  • 1 tbs Rosemary
  • 0.5 tbs Sage
  • 0.5 tbs Thyme
  • 0.5 tbs Garlic Powder
  • 1 tsp Salt
  • 1 tsp Pepper

Directions

Prepare chicken 15 minutes

  1. Remove any guts that may be inside the chicken.

  2. Rub the chicken with oil, coating thoroughly.

  3. Rub the chicken with the herb mixture - rosemary, sage, thyme, garlic powder, salt, pepper. Be generous!

  4. Use butcher's twine to tie legs together. This will help prevent the legs from getting burned.

Cook chicken 80 minutes

  1. Preheat grill to 400 degrees fahrenheit.

  2. Place chicken on the grill, breast side up. Cook for about 55 minutes.

  3. Flip chicken over to brown the breasts. Drain the juices from inside into a bowl. Cook for another 5 minutes.

  4. Let sit for about 20 minutes and then carve.
