Gluten Free Pretzel Bites
My wife and I love pretzels, but finding gluten-free soft pretzels is nearly impossible. These pretzel bites are absolutely delicious!
Ingredients
Dry ingredients
- 3.5 cups Gluten Free Flour
- 3 tbs Light Brown Sugar
- 2 tsp Instant Yeast
- 1.25 tsp Salt
- 1 tsp Xanthan Gum
- 0.5 tsp Baking Powder
Wet ingredients
- 1 Egg
- 2 tbs Butter, softened
- 1.25 cups Warm Water
Pretzel soak
- 4 quarts Water
- 0.25 cup Baking soda
- 2 tbs Sugar
Directions
Prepare dough 10 minutes, plus 60 minutes to set

Combine all dry and wet ingredients into a mixer bowl: flour, brown sugar, yeast, salt, xanthan gum, baking powder, egg, butter, and water.

Using a mixer with a paddle attachment, mix the ingredients until the dough is firm, for about four minutes. Add extra water slowly if necessary.

Transfer dough to a floured surface and knead until dough is smooth.

Lightly grease a bowl and place dough inside. Let sit for about 60 minutes.
Get stuff ready 5 minutes

Preheat oven to 425 degrees fahrenheit.

Line two baking sheets with parchment paper or silicone liners

Bring four quarts of water to a boil.
Prepare dough bites 15 minutes

On a floured surface, divide the dough into 12 equal pieces.

Roll each piece into a rope, about 12" long. Add extra flour or water to the dough as you roll to make it less or more sticky.

Cut the ropes into pieces, each about one inch long.
Make pretzels About 5 seconds per batch, about 30 minutes total

Add 1/4 cup of baking soda and 2 tbs of sugar to the boiling water. Wait for the foam to subside.

On a floured surface, divide the dough into 12 equal pieces.

Add 12-15 dough bites to the boiling water. Remove them after about 5 seconds and place them onto the baking sheets.
Season and bake 12-15 minutes

Sprinkle the pretzel bites with coarse salt.

Bake about 12-15 minutes.
