Chocolate pizzelle cookies
One of my favorite memories from childhood was eating pizzelles at Christmas time that my Grandpa, and later my Grandma, would make. These are chocolate versions of the traditional Italian cookies.
Ingredients
Dry ingredients
- 10 tbs Sugar
- 1 tbs Baking Powder
- 2 cups Flour
- 0.25 cup Cocoa Powder
Wet ingredients
- 4 Eggs
- 10 tbs Butter, softened
- 1 tsp Vanilla
Directions
Prepare ingredients 10 minutes

In a large bowl, mix the dry ingredients together - sugar, baking powder, flour, and cocoa powder.

In a separate bowl, mix the wet ingredients - eggs, softened butter, and vanilla.

Slowly pour the wet ingredient mixture into the dry while mixing. Start kneading the dough when it becomes too tough to mix.
Make the cookies Approximately 2 minutes per cookie; Plan for about 90 minutes total.

Knead the dough so it's about 1/8" thick. Using a cookie cutter, jar lid, or other circle about 2" in diameter, cut out the dough.

If you are using an electric waffle maker, plug it in and/or turn it on.

If you are using a cast iron waffle maker over a gas stove burner, turn the burner on to low-medium heat and preheat the iron.

Place a cookie dough circle on the wafle iron and close.
