Pizzelle cookies - classic anise flavor

One of my favorite memories from childhood was eating pizzelles at Christmas time that my Grandpa, and later my Grandma, would make.

Ingredients

Dry ingredients

  • 15 tbs Sugar
  • 2 tsp Baking Powder
  • 4 cups Flour

Wet ingredients

  • 6 Eggs
  • 15 tbs Butter, softened
  • 1 tsp Vanilla
  • 1 tbs Anise

Directions

Prepare ingredients 10 minutes

  1. In a large bowl, mix the dry ingredients together - sugar, baking powder, and flour.

  2. In a separate bowl, mix the wet ingredients - eggs, softened butter, vanilla and anise.

  3. Slowly pour the wet ingredient mixture into the dry while mixing. Start kneading the dough when it becomes too tough to mix.

Make the cookies Approximately 2 minutes per cookie; Plan for about 90 minutes total.

  1. Knead the dough so it's about 1/8" thick. Using a cookie cutter, jar lid, or other circle about 2" in diameter, cut out the dough.

  2. If you are using an electric waffle maker, plug it in and/or turn it on.

  3. If you are using a cast iron waffle maker over a gas stove burner, turn the burner on to low-medium heat and preheat the iron.

  4. Place a cookie dough circle on the wafle iron and close.
