Egg Bites
Breakfast is hard. Healthy, filling breakfast on a busy schedule is even harder. I started making these on a whim and have made them almost every week since February 2024. Grabbing a couple of these when rushing out the door for work in the morning has been great.
The most common ingredients I use are spinach, sausage, and shredded cheese. But I've also used diced tomatoes, green onions, diced ham, bacon, and everything bagel seasoning.
Ingredients
- 12 Eggs
- 1 pinch per egg Salt
- 1 pinch per egg Pepper
- 1 cup Spinach
- 1 cup Cheddar Cheese, Shredded
- 6 Sausage Links
Directions
Prepare frozen items 5 minutes

Place frozen spinach on a plate and cook in microwave for about 30 seconds. Add another 30 seconds if necessary to break up any remaining pieces.

Place frozen sausage on a plate and cook in microwave for about 1 minute.

Cut sausages into small pieces.
Prepare egg bites 50 minutes

In a large bowl with a spout, whisk 12 eggs. I use a four-cup measuring cup.

Add salt and pepper to eggs.

Fill a muffin pan with silicone liners.

Pour egg mixture into lined muffin pan.

Add remaining ingredients to muffin pan - spinach, shredded cheese, and sausage pieces.
Bake egg bites 20 minutes

Preheat oven to 350 degrees fahrenheit.

Bake egg bites for about 20 minutes.
Freeze for later (optional) 24 hours

After baking egg bites, let them cool to about room temperature.

Remove egg bits from liners and place in a single layer on a cookie sheet or shallow cake pan.

Place in a freeze for 24 hours.

After frozen, place egg bites into a zip lock bag.
