(Baked) Gluten Free Boneless (Garlic Parmesan) Chicken Wings

This is a recipe of which I've gone through several iterations, each time getting better. I wanted to try to mimic chicken wings my wife and I get from a local restaurant and absolutely love. It's not an exact replica, but we still devour them.

If you want to make a double batch, you can freeze some for a later time. Place the chicken wings in a single layer on a baking sheet and place in a freezer for 24 hours. Then transfer to a ziplock bag for better storage.

Ingredients

Chicken wing dry coating

  • 2 lbs Chicken Breasts, cut into one-inch pieces
  • 2 cups Flour
  • 0.5 tsp Paprika
  • 1 tbs Garic Salt
  • 1 tsp Pepper
  • 1 tsp Onion Powder

Chicken wing wet coating

  • 0.5 cup Milk
  • 2 Eggs

Cheese sauce

  • 8 tbs Butter
  • 6 Garlic gloves, minced
  • 16 oz Heavy whipping cream
  • 2 cups Parmesan Cheese, grated
  • 1 tsp Salt
  • 1 tsp Red Pepper
  • 1 tbs Oregano
  • 0.5 tsp Paprika

Directions

Prepare chicken wings 2 hours total, 30 minutes active

  1. Cut chicken breasts into one inch pieces.

  2. Combine ingredients for the wet mixture - milk and eggs.

  3. Combine ingredients for the dry coating - flour, paprika, onion powder, garlic salt, and pepper - together in a large bowl.

  4. Toss the chicken cuts in the wet mixture.

  5. Remove chicken from the wet mixture and toss into the flour mixture, making sure everything is coated thoroughly.

  6. Place bowl with chicken in the refrigerator for at least an hour to chill.

Bake chicken wings 25 minutes

  1. Preheat oven to 375 degrees fahrenheit.

  2. Spread chicken wings on a baking sheet lined with a silicone mat.

  3. Bake chicken wings for approximately 25 minutes until they reach an internal temperature of 165 degrees fahrenheit.

Prepare parmesan butter garlic sauce 15 minutes

  1. Warm a sauce pan over medium-low heat.

  2. Add 4 tbs butter to the sauce pan and let it melt. Add the garlic and sauté for about 30 seconds.

  3. Add 16 oz of heavy whipping cream and bring to a boil, stirring frequently.

  4. Lower the heat and let the mixture simmer for about 8 minutes, continuing to stir. The sauce should start to thicken.

  5. Mix in 16 oz of grated parmesan cheese, oregano, paprika, salt, and red pepper flakes.

Coat wings in sauce 5 minutes

  1. Remove the chicken wings from the oven.

  2. Move the chicken wings to a large bowl or casserole dish. Pour the cheese sauce over the chicken wings. Shake or stir the wings and cheese to coat thoroughly.
