Chicken Parmesan

My absolute favorite meal - chicken parmesan! Complete it with a side of spaghetti and slice of garlic bread.

To keep the dish gluten free, I use Aleia's Italian Bread Crumbs

Ingredients

Pantry ingredients

  • 0.5 cups Flour
  • 1.5 cups Italian bread crumbs
  • 16 oz Pasta sauce (I like a tomato and basil style)

Refrigerated ingredients

  • 3 lbs Chicken breasts
  • 2 Eggs
  • 0.25 cup Milk
  • 8 oz Fresh mozzarella (or shredded if you prefer)

Directions

Prep 5 minutes

  1. Preheat oven to 375 degrees fahrenheit.

  2. (Optional) Filet the chicken breasts if they are extra thick to decrease cooking time.

  3. Pour flour and bread crumbs onto separate plates.

  4. Mix two eggs and ¼ cup milk in a large bowl.

  5. Spray a large casserole dish with olive oil.

Prepare chicken 15 minutes

  1. Coat the chicken breasts with flour.

  2. One at a time, dunk each chicken breast into the egg mixture and then place onto the plate with the breadcrumbs.

  3. Coat the chicken breast thoroughly with bread crumbs and place in the casserole dish.

Finish assembly 5 minutes

  1. When all of the chicken has been coated with bread crumbs and placed in the casserole dish, top them with pasta sauce.

  2. Top with slices of fresh mozzarella.

Bake 25 minutes

  1. Cover the dish with aluminum foil.

  2. Bake in the oven for 25 minutes.
